Ingredients:
1 lb ground beef 🥩
1 onion, diced 🍠
2 cloves of garlic, minced 💡
1 cup breadcrumbs 🍞
1 cup shredded cheddar cheese 🧀
1/2 cup shredded mozzarella cheese 🧀
1/4 cup chopped bacon 🥓
1 egg 🥚
1/2 cup ketchup 🍅
1 tsp dried oregano 🌿
Salt and pepper to taste ❗️
1 cup mashed potatoes 🥔
1/4 cup chopped scallions (optional) 🌿
Preparation Steps:
1️⃣ Preheat oven to 375°F (190°C). 🔄
2️⃣ In a large skillet, cook the bacon over medium heat until crispy. Remove from heat and set aside. 🥓
3️⃣ In the same skillet, add the diced onion and minced garlic and cook until softened. 🍠
4️⃣ In a large bowl, combine the ground beef, cooked onion and garlic, breadcrumbs, egg, ketchup, dried oregano, salt, and pepper. Mix well with your hands or a wooden spoon until just combined. 🥩
5️⃣ Stir in the shredded cheddar and mozzarella cheese. 🧀
6️⃣ Transfer the meat mixture to a 9x13 inch baking dish. Top with the cooked bacon. 🍖️
7️⃣ Spread the mashed potatoes over the top of the meatloaf. 🥔
8️⃣ Bake for 45-50 minutes or until the meatloaf is cooked through and the potatoes are golden brown. 🍴
Notes:
To make ahead, prepare the meat mixture and mashed potatoes separately, then assemble and bake when ready.
Use leftover mashed potatoes to make the casserole even easier!
Add some diced bell peppers or jalapenos to the meat mixture for extra flavor.
Useful Tips:
Make sure to not overmix the meat mixture, or it will become dense.
Use a meat thermometer to ensure the meatloaf is cooked to a safe internal temperature of 160°F (71°C).
